Internationalization of FPIK UB Teaching through 3in1 Program in 2025

The Fishery Product Technology (THP) Study Program, Faculty of Fisheries and Marine Sciences (FPIK) Universitas Brawijaya (UB) is again holding the 3in1 Program in 2025 by presenting two leading experts from the International Center of Excellence in Seafood Science and Innovation (ICE-SSI), Prince of Songkla University (PSU), Thailand. The two Visiting Professors are Asst. Prof. Dr. Avtar Singh and Dr. Natchaphol Buamard, who are widely known internationally for their expertise in the field of surimi processing and technology innovation.

This 3in1 program is designed as an effort to strengthen the quality of learning while encouraging the internationalization of the curriculum, especially for the Surimi Technology course. The activity began on Thursday, April 24, 2025, through an opening ceremony opened by Prof. Dr. Sc. Asep A. Prihanto, S.Pi., M.P. as Vice Dean 1 of FPIK UB, and continued with a guest lecture by Asst. Prof. Dr. Avtar Singh who presented the topic “Enhancing Surimi Gel Strength with Natural Additives from Seafood Waste.” In this session, Dr. Singh explained the potential of marine waste as a natural additive to increase the gel strength of surimi products. A total of 150 THP students enthusiastically attended this lecture, which ended with an interactive discussion.

The lecture continued on Saturday, May 3, 2025, with a session from Dr. Natchaphol Buamard who raised the theme “Innovative Processing Technologies for High-Quality Surimi Gel.” He explained the latest technology in processing fish protein to produce high-quality surimi. Not only explaining the theory, Dr. Natchaphol also introduced a number of innovative processing methods such as the use of microwave heating, ohmic heating, and water bath heating. He also highlighted the potential of local materials such as activated coconut fiber as a surimi gel quality enhancer. This session was attended by 146 THP undergraduate students, who were actively involved in the discussion and Q&A session.

The program continued on Saturday, May 10, 2025, where Asst. Prof. Dr. Avtar Singh shared his knowledge again on the topic “Value Added Products from the Shrimp Processing Industry.” This lecture emphasized the importance of diversifying processed shrimp products to create added value and increase the competitiveness of the fisheries industry, both in the domestic and global markets.

As the closing of the series of activities, Dr. Natchaphol Buamard gave a lecture on Thursday, May 15, 2025, on the topic “Functional and Nutritional Enhancements in Surimi-based Products.” In this lecture, he explained how surimi development not only focuses on texture and taste, but also pays attention to functional aspects and nutritional content to support the need for healthy food in the future.

The presence of two experts from ICE-SSI PSU is a real form of international collaboration and strengthening of academic networks between Universitas Brawijaya and Prince of Songkla University, Thailand. In addition to enriching students’ insights, this activity also serves as an inspiring forum to broaden the horizons of research and innovation in fisheries technology.
